Maavadu or vadu mango pickle recipe. An easy pickle recipe using baby mangoes vadu mangai that requires no cooking, no cutting, minimal oil that can be stored for more than a year. We had an orchard full of this special variety mango for maavadu and avakkai and Narthangai citron which were leased out leaving out 2 or 3 trees which were for our personal use. During the season, the lessee will bring in his own men to harvest the mango and citrons and apart from paying the lease amount, he will also instruct his men to harvest the fruits from the trees left out for own own use. During those days, the entire neighbourhood will look festive and we will literally be surrounded by the aroma of the freshly plucked mangoes and citrons.

Please clarify. So I pickke done without applying oil? Gingelly oil is the conventional and gives a nice aroma and taste. There should not be any moisture at all.

Also can powdered salt be used instead of Kallu uppu ground! There should not be any moisture in the mangoes. If you are making it in bulk, coat the mangoes with a few tsp of castor oil after drying it well. You do not have to remove the seeds.

Since we are making very small quantity, I am very fond of mangoes before reading this post I had no idea about Vadu mango pickle however after going through this post i asked my mom to make this for me as you have explained the recipe in a very simple manner? You must reciep it well and air dry the mangoes before making the pickle. Pockle Radhika, it gets over very fast. Shake the mangoes or using the laddle well for the mixture to mix with the vadumangaai.

The mango along with salt should produce that water. Whenever we use wet spoon or if u have added any water by mistake then this will happen. Also can powdered salt be used instead of Kallu uppu ground. Be it a fruit or raw mango, every day during summer it will be there in my plate in some form.

Once you see the water usually after days you can stop the stirring. Put the mangoes back in the jar and mix well. I did as you said. It tastes divine with some cool curd rice.

    Total Time 20 mins. This is the liquid that oozes out of the mangoes and the salt. Congratulation dear. They don't look good.

    For 16 cups of vadumangai we should take 1 cup of powered salt and 1 cup of red chilli powder and that is the ratio. If not, you can just dry roast the regular mustard seeds and coarsely powder it. You may also like:. Also i am not clear how 10 baby mangoes weith g.
